Many a night, I turn to eggs to make a meal seem more hearty and complete. It’s usually unplanned and last minute, but when the Veggies are down and my Husband is hungry, it’s my crutch.

It maybe #memeish of me, but I find the always on hand, super versatile egg, ripe for topping anything from veggies to ham to grains and yes, even on one desperate night, soup. My eggdiction didn’t get started until I mastered the 7 minute egg and realized it’s pretty easy to pimp out a plate with this golden, yolky, goodness gushing forth.

I blame it all on this perfect, pinup from Bon Appétit with deliciously, explicit boiling details.  Which, all joking aside, I did rip out and keep on hand.
